Summer Cocktails at El Fenn
Watching the sun go down on our roof terrace is arguably our favourite time of day at El Fenn. Just add one of these cocktails and it might just be one of life’s perfect pairings. We like to make the most of seasonal fruits when we create our summer cocktails and the El Fenn mixologists have put together three delicious drinks for you to try at home. One combines orange and lime with fragrant rosemary and another muddles basil and pineapple, the ultimate summer flavours.
El Fenn Sunrise
Rosemary and orange peel infused tequila 6CL
Freshly squeezed lime juice 2CL
Fresh orange juice 5CL
Sugar syrup 1CL
Angostura – 2 dashes
METHOD
Bash a sprig of rosemary and add it, plus a few strips of orange peel, to the tequila. Leave it – ideally overnight – to infuse.
Add all the ingredients to a shaker with ice, shake and strain before garnishing with orange peel and rosemary.
El Ksour Gin
Gin 5CL
Triple Sec 2CL
Lime Juice 2CL
Passion fruit syrup 4CL
Fresh Basil leaves 5
Pineapple 15g
Cucumber 10g
Touch of egg white
METHOD
Muddle the chopped basil, pineapple & cucumber in your shaker before adding the rest of the ingredients. Dry shake for 20 seconds before shaking with ice. Strain into a martini glass.
Melontini
Basil infused vodka 6cl
Fresh melon (5 piece) and basil (3leaves)
Fresh lime 3cl
Simple syrup 1.5cl
METHOD
Add cut melon to a cocktail shaker.
Smash the basil and add to shaker.
Muddle together until melon has completely broken down.
Add vodka, lime and simple syrup.
Dry shake.
Add ice and wet shake.
Double strain into a chilled martini glass.
Garnish with a melon slice and basil leaf.
